I can get an awesome deal on some 16x9 wheels and I was wondering how far would they stick out of the wheel wells and how much triming would I have to do? Any help with this would be greatly appreciated

That would depend on the backspacing or offset of the wheel........

Anything less than 5.5" of BS on a 9" rim is going to start a pokin out.

They will work but they will stick out, depending on backspacing like Norcal said. Also with a wider wheel it's harder to fit a big tire without it hitting when you turn.

I plan on running 285/75/16. I know I might have to do some triming but how bad will my turing radius be or rubbing?

I think you'll be ok, depending on backspacing. Lots of guys running 285s on 16x8s with minimal modification. That would be tieing the e-brake cable back and tieing the plastic fender liner back. If they do rub you can always do more trimming...
