So the craziest thing is happening... All gauges are dead.
Then, I plug in my cheap OBD code scanner tool, turn key, then all gauges alive & working.
Go to start the truck 3-7 days later, all dead again.
I then repeat above "fix" then all alive for a period of time.
WTH?!

dlshunter -- I am seeing something similar with my 2006 c4500. Are you still seeing this problem? I have started with ground wire connections since another thread suggested it could be a source of the problem. I get a battery dash light when the gauges go out (I do still have speedometer and tach). I sometimes get a parking brake and/or ABS dash light with the battery light. Plugging in my OBD scanner made the problem go away, as you describe, but it may have been coincidental since this gremlin comes and goes. I get no error codes.

I am wondering if a bad relay(s) could be the culprit? I have the wiring diagram from another thread on this awesome site, so I will take a look at swapping relays.

I gave in and took mine to a shop. They found a bad ABS controller in my case.
