Spaghetti with meatballs tonight.
The meatballs are:
3/4 lb ground chuck
1/4 lb Italian sausage
1/4 cup Parmesan cheese
1/2 finely minced carrot
4 green onion finely diced
3 tablespoons of sun dried tomatoes diced
2 eggs
1 teaspoon fresh oregano
1 teaspoon chopped bay leaves
1/4 teaspoon coarse pepper
1/4 cup chopped stale bread
1 Serrano Pepper seeded & minced
1/8th cup heavy cream
I mix up the ingredients, form meatballs and drop them into a deep pot og boiling water. Let them cook for about 15 minutes then at the meatballs to my fresh pasta sauce.
Pasta sauce:
8 seeded and skinned tomatoes coarsely chopped
3 cloves garlic minced
Salt
Pepper
1/4 water
1 teaspoon Oregano
Simmer Sauce only for 1 hour
Add the meatballs and simmer another hour.
Serve with Extra sour dough bread & copious amounts of Sierra Nevada Beer.
