When at idle or driving around town its around 160-165. If I drive 70mph its around 165, but if I drive 80mph my coolant temp jumps to 200 going down the highway till I slow back down. Is this normal?

Are you reading this from the factory gauge the factory gauge is a glorified idiot light it has little to do with the actual engine temp in degrees.

Yeah Im using the factory gauge. I may plug my laptop in and see what it says. I was wrong on the temps. It reads about 185 normal and 210 going 80mph.

If you let it idle, it will cool down even more, the diesel gets hot when you work it, so yes it will cool when you slow, and get warmer the faster you go.

If it's cold out mine won't get as warm as other times unless I am towing on the highway or have a winter front on. Runs about 200 on the highway in warm weather empty or towing. Around town in cold weather (32 or below) 160ish is not abnormal.
