How important is that jacket on the passenger side battery? I just had both batteries replaced and discovered that the shop that replaced them did not put the jacket back on the battery. Do I need to be concerned or do I need to go back to the shop and have them install a new jacket? I'm sure the old one has been discarded in the past 24 hours.

I would. It is there to protect it from the heat of the engine. Heat kills batteries.
