When I am changing the head gaskets, do I have to machine the heads? If so what should I have done?

Why are you changing the head gaskets? Did it run hot? If it ran hot...I'd have them magnafluxed and surfaced, but thats just me.

I am blowing tons of white smoke, but there is no coolant in the oil... I am assuming blown head gasket

Ditto on the magnaflux to check for cracks. The machine shop can check for flatness while you are there. Make sure you either tell them to keep the valves/pieces in order or do the dis-assembly yourself. From what I have read here the push rods and valves should go back in the same place they came out.

My machine shop took everything apart and put it in a box. Nothing lost since my heads were cracked anyway.

the heads will more then likely be cracked, they always are. The cracks do occur in locations where the coolant will not leak out but they will be cracked non the less.

Yes, get them surfaced to true them up, and check them for cracks.
