Limp mode while towing

2007.5, same has been bullet proofed, everything deleted, towing program professionally installed, full pump put on and it still goes into limp mode while pulling camper. it quickly clears its self though, i'm scared i may still be hurting something. And yes i use tow mode and don't let it get above 5th gear. I can always tell when it's going to, the water temp raises very fast right before it happens. Any ideas??
