2006 Duramax goes into limp mode ONLY when under a load

Last year in the hottest part of summer, towing a 12k RV the engine went into limp mode, within 20 miles of home. After shutting off engine for an hour or so, it would run fine for 20 miles or so, then shut down again. Took it diesel specialist and nothing showed up in codes. Later, I discovered the fan clutch was not working. We replaced the clutch and it has been fine for 6 mos, now going into limp mode again. the fan clutch works (spools up)when engine is cold (?) until it reaches 180-200 degrees (according to gauge in cluster) then I never hear it again. I am assuming the engine reaches a temperature toward the hot side and then the clutch does not engage so the engine shuts down to keep from over heating. The gauge NEVER goes over 210. Any ideas of what else could be causing this to happen?? My understanding on the fan clutch is it is all mechanical, not electronic.. so it would have to be as the engine heats up to engage, but why does it come on when engine is warming up at beginning of the day?

The reason the fan clutch locks up at start is that it's an attempt to warm up the engine to operating temperature ASAP. If you never go over 210 (actual temp, not indicated by the stock gauge), that's good, but surprising. When towing, I often get pretty hot(225-230) until the clutch locks up and brings the temp down.
