So everyone always talks about what rear they have, even me, with my 14 bolt. But what about the front diff? I never see too much discussion about the models and types used in the trucks. Any source for good info about them?

For 1989 up to present 3500 have a GM IFS 9.25" dia. RG 34.8 (1.37") shaft, 33 spline. Not sure about the 2500 but I expect it would be the same.

Unless, it was a V3500 crewcab, then they had a solid Dana 60 up front through 1991. Cheers.

1500 uses 8.25 Ring gear, 8.5 is the Old Body Style rear with the 8.625 being the New Body Style Rear

Is the front diff open, a limited slip, or a locker on the 04 2500HD?

The front diffs are open on all the IFS trucks as far as I know. With the central axle disconnect system they use to disengage the front axle, the spider gears in the front differential are turning whenever you are in 2 wheel drive. I believe the only type of locking differential that will work in this type of setup is some type of electric or pneumatic actuated locker.
