I was towing my 5th wheel and looked down at my oil pressure and it was skyrocketed. About 240 PSI.

60 psi is at the 12 o'clock position, this was at the 5 o'clock!!!

I pulled over and shut it down. I then truned on the ignition to see if the gauge would read 0 with the motor off. It did NOT, it was at the 2' oclock position. I fired it up and it moved the back to the 4. When I reved it it went up to the 5 o'clock position. I was reading the increas of pressure correctly, just way high. When it shut down it never went to zero. so I drove it. evryting was fine. On the way home from the weekend, I fired it up and it was the same. 1/2 way home, the gauge jumped to normal. It had jumped back and forth a few time.

Any suggestions?

I would get it checked. If your oil pump bypass is getting stuck, you can do some real damage. Having said that, I can see no way for warm oil at moderate rpms, having a pressure greater than 60, unless there is a major blockage PLUS bypass malfunction. So I am 99% sure you have a sender or gauge issue.
