When installing the thermocouple that is included with the Juice/Attitude, how far in should the probe be? Should it be in far enough to almost touch the opposite side of the exhaust manifold?

Put it in half way so the end of the probe is sitting in the middle of the manifold. I'm not entirely sure if the "whole" probe picks up the heat temp, or just the end, but everything I have read and seen says put it in the middle...

Thermocouples read at the tip only. The two wires are welded together to form a bead or ball. The union of the two metals generates a very small voltage that increases as it is heated. This bead is placed at the end of the tube and can be either in contact with the tube or electrically insulated from the case. They will only read the temperature where the two wires make contact with each other. As Chad said, try to place this tip in the center of the gas flow.
