I have a 4500 LLY D/A. It weighs 13,500# with what I carry everyday. So thats equal to a pickup with a trailer behind it. That truck went from Boston to Portland Oregon and back @ 17,500# with a two car trailer behind it (approx. 10,000 #). So even if my trailer guess is off alittle I know the truck was @17,500# for a total CVWR of at least 26,000#. The gauge does not budge and the truck was working. Its a C/C with a 14' box so as well as being heavy its pushig some air.
Where I am going with this is that your overheating is probably not a motor design defect as much as a stack issue. Although I think you may have already narrowed that out. I do not really know what your stacks look like but on the MD trucks there is about a 1" gap between each and every cooler. They do not touch each other at all. GM also clearly built a shroud around the grill to force the air from the grill through the stack.
As far as the trip to Portland it was April so it was not to hot but I hope this helped alittle. Let me know if I can help. By the way we do not tow at 55 or 60 either. ;)
