The extention wire that came with my gauge and probe is to short to reach my overhead gauge mount, can I lengthen the wire or should I get a differant probe?

You can lengthen the wire but you will need proper type K thermocouple wire to do it correctly. You can get pretty much anything thermocouple related from Omega.com.

Did you investigate running wire/tube up the passenger side "A" pillar, vice, drivers side?

Idahofox, I did look at that option but didn't want to drill another hole in my fire wall. I ended up taking a two foot section of my old egt probe from my edge box and soldered ring terminals to it, screwed it together and it seem to work fine.

I have the same problem. I emailed autometer asking about a longer probe lead in-order to move from a-pillar to overhead mount. They replied the same day and said they would send out a 10.5 ft. lead.
