I changed the oil this past weekend and went to lube the grease fittings.
The only grease I had was Amsoil Synthetic Marine grease that I use to lube the wheel bearings of my boat trailer and outboard engine. So I went ahead and used it. Did I screw up or is this grease ok for chassis lube?

If it's an NLGI #2 grease, which I believe that one is, it's probably just fine--it's not like you ruined anything by using it.
I used Amsoil Series 2000 grease on my last truck without any complaints, but I've never had any complaints about any of the higher quality greases I've used, so I can't give a sound answer on which grease is "the best."
I'm now using Mobil 1 synthetic grease and have no complaints. You wouldn't go wrong with traditional petroleum greases from Conoco or Valvoline either in my book. You probably ought to stay with a #2 though in my opinion.

Yep, you're probably fine to keep using that full time then if you wish. You might look for a grease designed for a heavy load, extreme pressure type application if you were so inclined.
I'm kinda on the fence about grease: I think the main thing is having it! At my previous job, all the heavy equipment got the cheapest grease the fuel distributor carried--no problems due to the grease, problems only arose when one of the knuckleheads missed fittings!

I use Pennoil Multi-purpose 302 EP grease with moly in all my equipment.<SUP>
