Today cruising along at about 55mph, I lay into it pretty good and the truck downshifts and the rpms shot up to 2500 and then the truck fell flat on its face. The truck would run great up to 2k and then start cutting out, I changed the fuel filter when I got home, but I was just curious if there could be anything else wrong??

Sounds like a low fuel pressure limp. Did it clear up after the filter was changed? There should be a code stored - you might go to an Auto Zone or Advanced and have 'em check your engine codes to see if there's anything stored.
