just wondering, shouldnt you be able to tell if your EGT's are getting high by your coolant temp rising?

Not necassarily. The medium of having coolant, varies in temperature slowly, as Egt's can fluctuate rather quickly. So if your running with load, & your Egt's are running high, it will slowly bring you coolant temp up as well. The best indicator is installing the gauge. I ran a Bd downpipe which had the temp mount, & I ran 4" back. Never had a problem with Egt's running hot after that.

If your not towing it's hard to make enough heat to screw it up unless you're not making the boost you think you are and then EGT's will skyrocket.
good reason for both guages, boost and egt.

iv got a turbo master and chip on the way(hopefully here in a few days) so would it be best to have the boost set higher to keep things cooler? and would running it set to low cause temps to go up a lot?

It's hard to explain how it all works but once you watch those guages awhile you'll know.
