I noticed that my transmission fluid temp has been running at 120 deg
since the colder weather has set in. What is the ideal temp in a
perfect world? What is considered to cold?

I'm using Mobil 1 atf and all readings are off the factory gauge. Ambient at 25 to 35 deg.

That's about what I run in the winter without the winter cover on. That's fine. I think that the optimum temp would be around 110-130 deg. But Mike will have to weigh in with a pro's opinion. http://www.dieselplace.com/forum/smileys/smiley4.gif

I don't like to see temps below 98.6 max. Work load will take care of the rest. Temps will rise as they need ( somtimes more than we want). You are cool.
