EFIlive indeed looks really powerful. But could it become dangerous in the wrong hands. Could a person destroy their engine with their own tuning? I don't want to buy a product that could potentially destroy my engine with a few alterations of my own doing.

no more dangerous the messing with an ignition system on a carbed motor and the jet/mettering rod in a carb

EFILive has both.
You install our software on your PC. Feel free to download our software for free - the link is in my sig.
Use the software to edit your tune and review logs, then plug FlashScan into your PC and your vehicle and upload/download your tunes and away you go.
I think in terms of causing damage, you need to take a planned approach. Think about what your changing and why. Review what others are doing and discuss the results they are getting. The tunes in the library are a great start, as are the starter tunes you get with purchase from EFILive dealers. Make small changes and keep a good filing system of your tunes so you can restore a tune you're happy with if your not happy with your latest creation.
Cheers
