I have an 04' DMax with about 27k miles, this past weekend I was pulling by boat up a pretty steep grade and I noticed that my water temps went up to about 230-240, I had the AC off and it was about 105 outside, is this normal? I know in my old gas truck I used to pull the grade when it was hot and the temp wouldn't go above 195. I also noticed that just normal driving the truck runs just shy of 200degrees is this normal?

This seems to be the norm with the Duramax... The temp will shoot up and then the fan clutch kicks in and drops the temp. The fan sounds like a hurricane when it kicks in.

Start with the overheating threads. It should take you a month or so to read.
