To do a total build, rods, heads, etc., would it be wise/worth the extra $$$ to find a LBZ block?

Eric why not? The price isn't much different is it? Seems if you are building a spare engine for a LBZ anyway why no use a LBZ block to start with?

You can buy a good LB7 engine a lot cheaper than an LBZ from what I have seen...

The question was to start with one or not. Since they typically will bring higher money, its not worth it. Your going to throw away the rods anyways. Best you'll be ahead is a set of pistons. The crank is a good piece to have if your hanging LBZ pistons as the LB7 crank needs to be clearanced to fit. The block is indeed different, but not enough to make much difference.

The block itself is supposed to be stronger but I'm not so sure it muchs matter with the power levels were making today. The trick is buying the other parts you need for a build. I recommend using LBZ pistons in all high Hp build so your looking at $1200 - $1400 for those to start. The last motor we bought was $3500 for a LBZ complete, so we sold the extra parts for $2500 and kept the short block to build from. So in this case it's cheaper to do this instead tieing up the orginal motor and buying parts. If you not in a hurry keep an eye out for a motor and go from there.
