I tried looking but cant find much info about the ATS head studs except that they are quite a bit higher than the ARP bolts. Is there a reason for this that I cannot find?

I don't think one is better than the other. ARP has a very good rep in the fastner biz.

I didn't think ats's studs have a hex broached in the end? Could be wrong tho.
Ats uses H-11 material and arp uses 8740.

The other thing is ATS was one of the first to have studs.

They do have the hex broached in the end. And you are correct on the material.

Can someone explain to me what the material difference is? I'm not familiar with those numbers.

Both materials have simular tensile strengths, but the H-11 can hold it tensile a bit better at a higher temps.
