There are always a ton of threads about how much the tranny can take. But, i also here about people bending rods and breaking blocks. At what point do you need to start upgrading the engine? Do i need to worry with the mods in my sig?

Above 500 is time to start saving.

The engine can do 600 pretty easily, but eventually something's gotta give

500 RWHP.

since most don't dyno at an engine dyno but rely on a chassis dyno.

I think Steve Cole may have said it best on the Duty Cycle of the engine

Stock LB7- 242 RWHP TBO 300,000 miles
Modded to 600 RWHP TBO 121,000 miles

If that was the original design parameters for the motor.

Look on Kennedy's web site & see how much he cranked out of his LB7. He's pushing it pretty hard.

Thanks for all the help guys! I got this VA box and was worried i might have to sell it because i didn't want to hurt my motor.

That VA box will tear up your trans. I speak from experience. Did not have any motor issues with it on my truck and it was on there for about 30K miles. Just have to watch EGT's and trans temps..
