When I drive through the desert (100+ degrees) my tranny is running around 200 degrees, sometimes a little over. Is this normal? This is the temp regardless of towing or not.

I would say that is normal. Mine has the same temp as yours, although it will go up a bit towing. Waiting on Mike L.'s cooler to be ready.

From my experiences with the truck, transmissions temps and trips across the desert, it seems to me that the fluid temp is very dependent on outside air temp. The hotter it is outside, the warmer the tranny temp. The fluid temp seems to be less dependent on the load that is being pulled. Your tranny temp of 200 deg F with an outside air temp of 100 deg F is right in the ball park with what I get with my truck.

The only other thing that raises the tranny temp fast is stop and go driving on a hot day in the hills around my house. Sometimes, I have to select the Tow/Haul mode to get the tranny to lock the converter more often. This seems to moderate the tranny temp rises.

Cooler should be ready tomorrow as far as install. Just for your information; Ally will not go into hot mode ( overhated trans) till it hits 259 F. Hot mode is when you will feel the converter clutch come on ( like T/H) but it will not be in T/H.
