My upper radiator hose was sucked in and I remember reading about the coolant cap being the problem. So I bought a new one, and that fixed the upper radiator hose, but now I think the engine runs cooler.

Maybe I am paranoid, but I never noticed the temp gauge moving as much before I changed caps. It just reached normal operating temp, and the needle stayed right beneath the 210 mark, and then stayed there, never moving except when pulling a heavy load, and then it would only go up to 210 and the viscous fan kicked in and it came down.

After changing coolant caps, the temp goes up to the mark just below 210, then the T stat opens and it goes down to the mark just above the 185 degree mark. It seems to fluctuate more than it did, up and down. Am I paranoid, or is this normal?

Well with in normal operating temps,I wouldn't be concerned. Might just be because of the ambient temps your now seeing
