How hard is it to install these "cat adapters" and how many will I need to run Big Rig filters on my truck?

Great price! Mine has worked great for a long while now. Using the better Cat filter, and they cost much less.

Nick's stuff kicks butt. Bought the adapter recently and am now running a new CAT UHE fiter instead of the OEM. The adapter is serious quality, and installation is straightforward.
